Chocolate Truffles

by Blaise on Nov.12, 2007, under Food, Photo

Ok, this one is quite exotic, and to be perfectly frank, I’ve never made anything of this sort. This was sort of an experiment, but it turned out quite well, and I’m enjoying, although I am unsure I will ever make this again. It was not hard by any means, but it takes a lot of time and makes a huge mess. At first I told myself I would take better pictures when I made it again, but I’m uncertain if I will again, so I’m posting these; they will have to do. The orange can be substituted with any coffee, liquor, flavor or even herb “tea”. The more liquid added to the mixture, the longer it will take to cool before you can form the truffles. The coffee will take approximately 30 minutes to cool in the refrigerator while liquids will take anywhere from 30 to 60 minutes to cool. Dried fruit or nuts can be added, but will make the forming steps harder. Unlike most truffle recipes, this one does not contain any dairy besides the chocolate. Substituting heavy whipping cream instead of the orange juice will make silky truffles, but they will only keep for two weeks unrefrigerated. Adding any humble amount of liquor will make for a delicious truffle.
